Lemon Chicken Breasts

This is an easy recipe and has a lot of flavor despite the short list of ingredients. 

Level 1: Nothing easier than throwing it all in the pyrex and baking it
Servings: 4
Ingredients:
4 skinless, boneless chicken breasts
1/4 cup EVOO
3 garlic cloves, minced
4 TBSP freshly squeezed lemon juice (you'll need one lemon)
1 1/2 tsp oregano
1 tsp ginger
1 tsp ground cumin
salt and pepper for chicken breasts

1. Marinade first. Mix lemon juice, oregano, cumin, ginger in a ziploc. Brush the chicken lightly with some EVOO if desired. Salt and pepper the chicken and add chicken to marinade. This recipe serves well over brown rice, start the rice if wanted now.
2. Marinade for 30 minutes or longer.
3. While marinading, warm the EVOO in a small saucepan over medium-low heat. Add the garlic and cook for one minute, do not allow the garlic to turn brown. Off the heat.
4. Entertain yourself while waiting another 20 for the marinade.
5. Preheat the oven to 350. In 9 x 13 baking dish, add the marinaded chicken and garlic. Bake for 30 minutes of until done. Serve with the brown rice. Pairs fantastically with white wine.
