Honey Glazed Sweet Potatoes

Mmmmmm Nothing like sweet potatoes in the fall and winter months! This recipe is not overbearingly sweet- you can still taste the potato instead of just sugar.

Level 1: Comforting and simple
Servings: 4
Ingredients:
4 sweet potatoes, washed and peeled
1 TBSP EVOO
1 TBSP honey
1 tsp fresh lemon juice
cinnamon, to taste

1. Line a baking sheet with parchment paper or aluminum foil. Preheat oven to 350.
2. Cut the potatoes into quarters. First, chop one inch thickness vertically to get a potato chip circular shape. Next, cut the circular potato into fourths, like you are making a cross with the knife. Uniform shape in best.
3. Mix together the EVOO, honey, and lemon juice. Place potatoes on baking sheet and drizzle mixture over them. Toss to evenly coat potatoes. Sprinkle with cinnamon.
4. Bake for 40 minutes or until your home smells amazing.
